Incomplete combustion of organic material forms various polyaromatic hydrocarbons (PAHs), some of which are carcinogenic. Especially benzo(a)pyrene, which is the main carcinogen in cigarettes and in oil. I know this because I test seafood from the gulf for PAHs at work. So far it's all clean, so don't worry about eating seafood because of the spill.
